As Women’s History Month draws to a close, I find myself reflecting on the women who have shaped my life the most. The women who immediately come to mind are those who helped raise me, but one woman who stands out in a unique way is Dolly Parton. Dolly is not just an icon of music and culture—she’s a woman whose influence has shaped the way I see the world and others. Her contributions to both the arts and society are immeasurable, and her kindness and generosity set a standard for what it means to give back.

Recently, Dolly partnered with Betty Crocker to release her own coconut cake mix, and it inspired me to create my own easy mug cake version in her honor. Dolly’s work spans across so many areas—whether through her chart-topping songs or her heartfelt philanthropy—her impact will never go unnoticed, just like the countless women who quietly shape us every day.

Here’s a simple and delicious mug cake recipe to celebrate Dolly and all the remarkable women who inspire us.

Ingredients

  • ¼ Cup + 1 ½ Tsp All-Purpose Flour

  • 2 Tablespoons Sugar

  • ¼ Tsp Baking Powder

  • 2 Tablespoons Melted Butter

  • 3 Tablespoons Milk (or a Milk Alternative)

  • ½ Tsp Coconut Extract

  • Shredded Coconut (Optional)

Instructions

  1. Melt the butter in your mug.

  2. Once the butter is melted, add the flour, sugar, baking powder, milk, and coconut extract to the mug and stir until smooth.

  3. If you’d like, stir in a sprinkle of shredded coconut for an extra touch of flavor.

  4. Microwave the mixture for 1 to 1 ½ minutes, or until the cake has risen and set.

  5. Enjoy your warm, sweet treat—perfect for celebrating Women’s History Month!
